Polytech Sorbonne is multidisciplinary school of engineering preparing for several degrees, among them, Food Science (Agroalimentaire).

The University of Milan (Università degli Studi di Milano, UNIMI), established in 1924, is a public multidisciplinary teaching and research-intensive institution. UNIMI is the top Italian University in most international rankings. UNIMI is the only Italian. University that belongs to the League of European Research Universities (LERU), the prestigious organization founded in 2002 as an association of research-intensive Universities sharing the values of high-quality teaching within an environment of internationally competitive research. UNIMI embraces 33 departments, 136 degree programmes, 33 doctoral programmes, and several vocational study programmes. UNIMI is the fifth biggest university in Italy with 59 775 current students, 1 772 post graduate students, 2,100 tenured professors, 150 researchers under 40, and 120 visiting professors/scholars. The Department of Food, Environmental and Nutritional Sciences (DeFENS) of the University of Milan is the largest Food Science Department in Italy, and was set up in 2012 with the mission to promote excellence in teaching and research by taking advantage of synergistic efforts among individuals and groups.

The groups at DeFENS involved in this project reap experts in the field of chemistry, biochemistry, and nutrition, offering outstanding facilities and expertise. DeFENS combine expertise in protein chemistry, also by using various - and often original - methodological approaches to assess the structural properties of proteins in food matrices, and means for modulating their structure/activity using in vivo and in vitro methodologies. The DeFENS team includes experts on human nutrition and on the role of food and dietary patterns in the modulation of eating behaviour and human health in the general population or target groups.

The University of Copenhagen (UCPH) was inaugurated on June 1st 1479, and with its more than 535 years, UCPH is one of the oldest universities in Northern Europe. With over 40 000 students and more than 10 000 (5800 academics and 4300 technical/administrative staff) employees, UCPH is the largest institution of education and research in Denmark and one of the largest institutions of research and education in the Nordic countries. The university comprises six faculties and around 100 departments, centres, museums, etc, and offers more than 200 study programmes in health sciences, humanities, law, life sciences, pharmaceutical sciences, science, social sciences and theology. UCPH is located in four campus areas in central Copenhagen. The number of foreign students (exchange, guest and full-degree students) regularly enrolled is around 4000.

Department of Food Science (UCPH-FOOD) is the leading research and education institution in Denmark conducting multidisciplinary research along the entire food supply chain. With a staff of 180 people, UCPH-FOOD addresses research within food design and consumer behaviour, plant-based food science, ingredients and dairy technology, process analytical technology and chemometrics, food microbiology and fermentation, and brewing science. UCPH-FOOD has strong national and international collaborations with leading food companies and research organisation.
